Potatoes! Who doesn’t love them? The humble potato is so versatile and can be used in multiple ways.
Peeling potatoes is not always fun, and discarding all those peels seems like such a waste! Some people use them for compost, but the majority of us throw them away.
I recently discovered that potato peels can be seasoned and baked! They are a great snack and are nutritious!
To make this recipe you need to start with great potatoes. They need to be scrubbed well before peeling and any parts of the potato that don’t look healthy (the green part or eyes) should be removed. Then peel away. Russets are good, but any potato will do.
Rinse the peels through water, pat them dry with paper towel. Toss them in some light oil and lay them out on a cookie sheet. Add salt, pepper, some thyme or other spices you might enjoy.
Place them in the oven at 425 F degrees for approximately 15-20 mins. Or until crispy.
Let them cool down and enjoy. For some flare serve with low fat sour cream and green onions.
Scraps become snacks and are a great alternative to tossing them out.
